A little inspiration for the week.

So I know this quote means something different to everyone. That's what I love about inspiration. It speaks to you exactly how you need it to. How do I want to live now? I could go on & on with that one. For now I will start with Kale. Weird , I know. I really want myself & my family to start eating healthier. Take our health into our own hands and have some control over how we feel. Yes..I have been feeling sluggish and tired. I read about this Wonder Food..Kale.
Kale is super healthy. A nutritional powerhouse. They call it (whoever "they" are the Queen of Greens). So, with that I chopped up some Kale and made this amazing salad.
Chopped some organic field greens, red and yellow cherry tomatoes and chopped kale. Now for my amazing dressing.

So sorry, I very rarely measure. So I eyeballed this one. Apple cider vinegar (half cup sort of), dijon mustard (maybe tablespoon), s & p, Maple Syrup (about 2 tablespoons). Then I wisked in about 1/4 cup( could have been slightly less) of Olive Oil. Sooo good! It was delicious and I loved the kale in the salad.  Next time I will measure for you.

I read that Kale Chips are very good and satisfies that need for chips if you are a salty snack kind of person (which I am!). I chopped up some kale..not too small and tossed in a drizzle of olive oil and some sea salt. Spread on a baking sheet and baked on 375 for about 25-30 min. Until crispy. I really wanted to love this. I just didn't. Some people say they love this snack. I am not one of those people. The texture was weird to me. Ok..So I will stick with the salad.

Oh, & my new latest tasty fave...french sodas.

    Love kale and have my favorite "kale salad" somewhere on my blog. I also like to juice it!

    Wonderful quote and means so much. My father is beginning the later stages of dementia (not saying this to create a feeling of sadness) and he it's very apparent that he feels that he didn't live enough in the moment and "lost" out on some of his life ~ working in excess and not spending enough time with his family and doing things to make him a happy person.

    It's been an eye-opening journey for me.. so YES great quote .. and kale is good for the brain!
